Pancakes that are healthy and yummy – say it isn’t so!  Well, it is so with these Whole Wheat Pancakes.

A Kitchen Break for Me

Almost every weekend my amazing hubby makes breakfast for everyone.  It is a wonderful break for me and I look forward to it every weekend. As a result, my hubby is continuously experimenting with recipes for different types of healthy pancakes. And I have to say, from what I ate this morning – the bus stops here.  These Whole Wheat Pancakes are amazing!  He’s significantly mastered an amazing pancake.  It was soooo incredibly yummy, and the cinnamon – oh, the cinnamon….mmmmmmmmmm!

Whole Wheat Pancakes

Yield: 7 extra large pancakes.

With a touch of cinnamon included, these yummy pancakes are a healthy treat.

Ingredients

2 cups unbleached white whole wheat flour
4 ½ t baking powder
½ t salt
2 t cinnamon
2 t sugar
2 eggs
2 cups plus 2 T of 2% milk
2 t pure vanilla extract
cooking spray

Instructions

  1. Combine dry ingredients; Mix the flour, baking powder, salt, cinnamon, and sugar, in a medium bowl.
  2. Mix in the eggs, milk, and vanilla, into the bowl with the dry ingredients.
  3. Mix both well, until all dry spots are gone, being careful not to over mix.
  4. Spray cooking spray on a large skillet and heat skillet over medium heat.
  5. For each pancake pour out approximately ¼ cup of batter on skillet.
  6. When their are very little bubbles left and the edges start to set, it's time to flip over the pancakes.

Did you know the most documented benefits of whole grains are some major things such as, reduced risk of stroke, reduced risk oftype 2 diabetes, reduced risk of heart disease, better weight maintenance, less inflammation, and a lower risk of colorectal cancer?

I mean, why wouldn’t you add more whole wheat to your diet?  Moreover, I completely understand if you have a gluten intolerance  – the benefits do not outweigh the risk there.

      Thanks for the feedback, they were very yummy Lila, and the cinnamon was amazing! I even snuck a few off the griddle to freeze for later ;) I hope you like them as much as me :)
