Let’s be honest.

This is not going make you lose 20 pounds.  But it will fill your belly.

It’s not the slightest bit healthy.  But it is pure delicious joy.

It won’t help you get that job you want.  Well, unless you make them for your future boss.

It had to happen – purely by accident.  I bought the regular size peanut butter cups with the intention to make mini cookie cups.

Well, that’s what happens when you quickly glance at something, and then buy all the ingredients you think you need.  lol.  I was inspired by this recipe on What’s Cooking With Ruthie.  Buuuut I wanted to make the dough from scratch & not use the processed, pre-made tube.

So, I went to the store, got my peanut butter cups, went home, preheated the oven, mixed up the cookie base in the mixer, and then started to read the directions (because how was that peanut butter cup going to fit into that little mini muffin pan hole anyway?!).  Well, duh – that’s what I get!  lol – I was supposed to get MINI peanut butter cups!  It was 9pm & too late for me to run to the store just for mini peanut butter cups.  So, what’s a girl do to – put on her thinking cap & make it work!  Well, it turned into a two day event of experimentation!

I experimented with different temperatures (because I had to upgrade to a regular muffin pan), and different techniques in placing the peanut butter cups in (because it surely didn’t work using the original recipe with my altered ingredients ;).  I was DETERMINED to MAKE IT WORK!  Tim Gunn would be so proud ;)

So, after several small victories along the way, & some minor failures – by golly, I have a new, original recipe for you!  And I thought it “needed” something more…like buttercream frosting… mmmmmmmmmmm.

Peanut Butter Cup Cookie Cups (with vanilla buttercream!)

Peanut Butter Cup Cookie Cups

These peanut butter cup cookie cups are a mouthful of peanut butter, cookie, and vanilla buttercream goodness.

Ingredients

cookie
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, softened to room temperature
3/4 cup sugar
3/4 cup brown sugar, packed
1 teaspoon pure vanilla extract
2 eggs
1 bag of regular size peanut butter cups
icing
1 cup (2 sticks) unsalted butter, softened to room temperature
3 cups confectioners (powdered) sugar, sifted
¼ teaspoon salt
1 tablespoon pure vanilla extract
2 tablespoons 2 % milk

Instructions

    cookie
  1. Preheat oven to 350° F.
  2. Grease a regular sized muffin pan and set aside.
  3. Combine flour, baking soda and salt in a separate bowl; Whisk and set aside.
  4. In a large mixing bowl beat together, butter, sugar, brown sugar and vanilla extract until creamy.
  5. Add eggs, one at a time, mixing well after each one.
  6. Using the lower mixer speed, slowly add the flour mixture, a little at a time until thoroughly incorporated.
  7. Drop mixture by large spoonfuls into pre-greased muffin pan and flatten down.
  8. Bake for 13-15 minutes, or until golden brown.
  9. Remove from oven and gently press down a peanut butter cup into the center of each cookie cup.
  10. Let rest in pan for 5 minutes. Transfer to a cooling rack to cool completely.
  11. If using right away - cool further in refrigerator for about 20 minutes - to harden the chocolate, or place in sealed container overnight to harden.

  13. In a large mixing bowl, using a paddle attachment, beat butter for a few minutes on medium speed.
  14. Using the lower mixer speed, slowly add the powdered sugar, a little at a time until thoroughly blended with the butter.
  15. Increase mixer to medium speed, then and add vanilla extract, salt, and milk; Beat for 3 minutes. (If frosting needs to be stiffer, add more powdered sugar, 1/4 cup at a time. If frosting needs to be thinned out, add more milk, 1 tablespoon at a time).
  16. Pipe icing onto peanut butter cup cookie cups.
  17. Enjoy!

    Melissa, these look so good. Had to giggle at your intro- clever! I can’t resist Reese cups and was SO happy when I saw the first bag ever being sold here in Costa Rica a few months ago. Love these cookies! I’d even experiment with them and try both your frosting and cream cheese frosting. YUM!
