You want to know what V loves more than apples?

(well, usually, yesterday morning not so much – let’s just say there was a battle of the wills)

Apples colored and flavored with Jello – yum!

These dried Jello Apple Chips only require two ingredients – apples & Jello, and are easily baked in the oven.





This healthy snack is also very fun for the kiddos to help you make & to help you eat!

YAY for easy, don’t worry I got your back in the easy-peasy department.

Well, I’m keeping it simple today with these Jello Apple Chips :)

Jello Apple Chips

Yield: Approximately 30 apple chips.

These dried apple chips only require two ingredients – apples & Jello, and are easily baked in the oven.

Ingredients

3 Red Delicious apples
Assorted colors of Jello packets

Instructions

  1. Preheat oven to 225° F.
  2. Line 1 baking sheet with parchment paper.
  3. Using an apple corer, core out and discard the center of each apple.
  4. Slice each apple into uniformly thin slices, about 1/8 inch thick.
  5. Place onto the prepared baking sheet close together, but not overlapping.
  6. Sprinkle a very light layer of desired color Jello flavoring on the slices, covering them evenly.
  7. Bake for 60 minutes; After baking, remove pan from oven.
  8. Using tongs flip over each apple slice; Bake for another 60 minutes.
  9. Remove from oven, let cool slightly, then transfer to an airtight container (or eat them :).
  10. The final texture should be pliable (not crispy).

Yesterday, V & her friend volunteered at our local animal shelter to braid beds for the shelter cats.  They then took turns reading to one of the cats, a cat who was having trouble eating that the shelter was hoping the interaction would coax him up & about.

I love that my kiddos have reached that middle school age where they can volunteer more easily without much parental help.  Our local animal shelter allows kiddos to volunteer (with a parent there) at age 10. It’s really rad to see them come into their own with understanding on how to have an active role in participating and volunteering in their community, and what a reward it is to give 🤩

🤗 How did you celebrate the arrival of 2021? 

🎲We played board games all night (cough cough surprise surprise 🤣) while munching on this charcuterie board.

🥳I surprised Eric & the kids by going all fancy for dinner last night. I wasn’t sure the kids would like the goat cheese (my favorite with fig spread 🤤) so I added some basic cheddar. But they LOVED it - I spread a little on one of the plain crackers with fig spread on top. So good! 

🍈Fig spread, goat cheese, & 2 large crackers is from @wholefoods 
🍇Grapes are from @costco (they have the best grapes!)
🪴Rosemary springs are from our garden.

🦀🐙🐡I backed Open Ocean from @featherstonegames on @kickstarter this summer.  It’s so incredibly neat to see a game come together from start to finish.

He’s a little bit funky... a little bit rock n r He’s a little bit funky... a little bit rock n roll. - I’m kinda loving him though, my little abstract tree.🎄

🧵Right before my dad passed last year, during my last visit with him, he gave me this giant bag of these vintage-y wooden spools knowing that I’d use them in my art classes or some other creative way. 

🧐As I was lesson planning this weekend the idea came to me when I peeked them in my wood craftin’ drawer - CHRISTMAS TREE!! 

✂️I also have a simpler idea in mind with no wire bending/cutting to try it in my art classes as a kinda ‘extra’ project for early finishers. Stay tuned!

Happy Thanksgiving 🍁🦃🍽 I’m grateful th Happy Thanksgiving 🍁🦃🍽 
I’m grateful this Thanksgiving for my Dad ❤️ 

📖📖📖When he was alive I’m not sure I appreciated this book as much, but now that he’s gone it’s made me appreciate him even more that he took the time to catalog all our family recipes into two cookbooks for us to have. 

🦃🍁🍂This Thanksgiving without my mom joining us (she’s with friends this year) I was without her traditional treats like my favorite Pumpkin Cheesecake.

💪🏻So I attempted that (my first cheesecake EVER!) and Tussies (mini pecan pies) from scratch using my families recipes.  I’m so excited to dig in today and the whole time making them made me feel extremely #grateful for my Dad & all he did for his family. 💕
