sweets: Halloween Fudge

So, if you’ve been following along, most (some not so much, but most ;) of my recipes require simple ingredients and very little time or thought involved.  Well, as a busy mama, this is how I roll.

I usually look into my pantry (you know, with a blank stare pondering life & such) and try to use what I already have…therefore feeding the belly AND cleaning the pantry!  Hehe…that’s how I clean, by baking and cooking ;)

This fudge is literally like eating cake batter, so, if you are cool with that, you’ll {LOVE} this :)  I have a serious love for all things cake batter, cotton candy, bubble gum…hmmm, well, yeah, you get the picture.  Enjoy!

Halloween Fudge

Serves: makes 36 fudge squares
This no-bake fudge is literally like eating cake batter. So, if you are cool with that, you’ll {LOVE} this :)
Ingredients
  • 2 cups + 2 TBSP white cake mix
  • 2 cups powdered sugar
  • 1/2 cup (1 stick) butter, cut into pieces
  • 1/4 cup 2% milk
  • 2/3 cup white chocolate chips
  • 1/2 cup orange & black nonpareils or sprinkles
Instructions
  1. Spray an 8×8 baking pan with floured non-stick cooking spray. Set aside.
  2. Combine cake mix and powdered sugar in a microwave safe bowl.
  3. Add milk and butter to the top of cake mixture (DO NOT stir them in, just sprinkle on top). Microwave for 2 minutes.
  4. After 2 minutes, remove bowl from microwave and immediately begin stirring everything together. The mixture will be thick.
  5. Gently fold in the white chocolate chips and nonpareils (you don’t want the nonpareil colors to blend too much into the fudge).
  6. Pour fudge into prepared pan, smoothing the top.
  7. Chill in the refrigerator for at least an hour to set.
  8. Cut into desired squares for serving.

      hehe – if you do make it though, my advice is to put it far back in the fridge so you forget it is there & not see it every time you open the door as a reminder of it’s yumminess ;)
